Serves 1-2
1 large carrot grated
½ fresh beetroot grated
½ cup of cucumber thinly sliced/cubed
½ avocado sliced
1 cup thinly diced dark leafy green vegetables – spinach, kale and/or parsley
2 tablespoon sunflower seeds
2 tablespoon pumpkin seeds/pepitas
1 teaspoon pine nuts
Detox Dressing
2 tablespoon fresh lemon juice
¼ cup olive oil (cold pressed)
Sprinkle mustard powder or 1 teaspoon wholegrain mustard
1 teaspoon apple cider or balsamic vinegar
Sea salt & black pepper to taste
Toss all Happy Skin Salad ingredients together in a bowl (not including the seeds and pine nuts).
Add Detox Dressing ingredients together in a jar and shake to emulsify.
Drizzle the dressing over the salad and sprinkle seeds and pine nuts over the top. For extra protein add tuna or salmon (in olive oil).
